Pork is a very versatile meat. For this course we used 1 1/2 inch thick pork chops. The pork was stuffed with blueberries to bring out the natural sweetness in the pork and to accent the flavor in Merlot.
Serves 10
10 each thick cut Pork Chops
1 pound Italian Bread Crumbs
1/2 pound Italian Sausage
1/2 pint fresh Blueberries
1 each Egg
1/4 cup Merlot
1/4 each onion, small diced
2 cloves Garlic, minced
- Cut a pocket into the Pork Chops so that they can be stuffed. Salt and Pepper the inside of the Pocket.
- Cook the sausage with the onion, also lightly cook the garlic. Let the mixture cool enough to touch.
- Combine mixture in a bowl with Blueberries, Egg and Merlot.
- Stuff dressing into the pocket of the pork
- Salt and Pepper the outside of the pork. Lightly oil the outsides as well.
- Place on hot grill for about 5 minutes on each side.
- Place pork chops on an oven tray and finish in a 350 degree oven for about 15 minutes or until an internal temperature of 155 degrees is reached.
