This sauce is very intense in flavor and should be used in small amounts as not to overpower the flavor of the meat that it is being served with.
Serves 10
1 bottle Merlot
1 pint blueberries
1/2 gallon Beef Stock
1 each Onion, rough chopped
1 each Carrot
1 each Celery Stalk
1 clove Garlic
1 sprig Parsley
1/2 tsp. medium grind Black Pepper
- Combine Merlot and Blueberries. Bring to a boil and allow to boil until the wine has reduced by 2/3.
- Combine the remaining ingredients and bring to a boil. Turn down the heat and let simmer for 20 minutes.
- Strain beef mixture. Bring the remaining liquid to a boil and reduce by 2/3.
- Strain Wine mixture into beef reduction. Thicken with a corn starch slurry.
