White Chocolate Crème Bruleé
Makes 4 servings

5 Egg Yolks
1/2 Cup Organic Sugar
2 Cups Heavy Whipping Cream
4 Oz White Chocolate
1/2 Tsp Mexican Vanilla
2 Tbsp Sugar

1.  Preheat oven to 300° F.
2.  Combine Yolks and 1/2 sugar in a bowl.
3.  Simmer Cream, Sugar and Vanilla in a saucepan.  Add Chocolate and melt.
4.  Pour 1/3 of hot liquid into bowl with yolks. Whisk as you pour it in.  Continue 1/3 at a time until completely combined.
5.  Ladle mixture into custard cups.  Place cups on a pan and put into oven.  Fill pan with water.
6.  Bake about 45 minutes until custard sets.  Remove and chill overnight.
7.  Just before service, sprinkle sugar over the top and place in broiler until sugar caramelizes.
