9 ounces tomatoes, canned
3 cloves garlic, crushed
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
3 cups chicken stock
1-1/4 cups rice, uncooked
1-1/2 cups onion, diced
1 cup celery, diced
1 cup green pepper, diced
1 tablespoon parsley, chopped
6 Cajun Sausage, Cut into 1 inch pieces
2 Chicken Breasts, cooked, 1 inch dice
1. Brown Peppers and Onions over medium heat in a stock pot.
2. Place tomatoes in pot when the onions are a soft brown color. Simmer an hour, stir occasionally.
2. Add garlic, thyme, bouillon, rice, and water. Bring to simmer.
3. When mixture comes to a boil, reduce heat, cover, and simmer 10 to 12 minutes, stirring once or twice.
4. Add meats, stir to combine, and simmer for 10 minutes. |
